Why We Chose 14% ABV

Most commercial meads target a light, 8–11% ABV audience. It's an easy market to enter. We chose differently.

14% ABV is where the honey develops true structure. The fermentation is more demanding. The aging is longer. The result is a mead that behaves like fine wine — rich, complex, and capable of genuine food pairing.
